This Japanese green ‘People's Tea’ was originally drunk by the poorer classes who added popped rice to the tea to make it go further. The infusion is bright and golden with a comforting nutty, slightly savoury flavour.

Green tea is delicate - to bring out the smooth complex flavours and avoid bitterness, use freshly drawn boiled water left to cool for 2 minutes.
